Chamber vacuum machines

    Any professionals out there using a chamber vacuum machine to prolong shelf life in foods? I read that cooked foods can be vacuum sealed and stored for up to 5 days without spoilage. Apart from sous vide cooking, what's the best use of the chamber vacuum in a professional kitchen?

    I'd imagine that vacuum packed meat would last a lot longer in the freezer, as the fat wouldn't oxidise and go rancid. Its something I'd love to have at home as I really want to give sous-vide a go, its something thats interested me for a while.
