    If the turkey is cut into steaks, I'd flatten it with a mallet or rolling pin, flour, egg-wash and breadcrumb (add some of the herbs to the crumbs) and shallow fry until golden - takes only a few minutes. To go with it, make a cous cous salad with finely chopped cucumber, tomato and more of the herbs. If you want a sauce to go with it, try blitzing a tin of tomatoes and cook with some fried garlic, a little white wine and some basil.

    Another tried and tested trukey recipe is this from Yotam Ottolenghi. Cook a spicy broth - start with frying a finely chopped onion, add garlic and chilli to taste, add tomato puree and or stock and cook for 10 minutes. Use this as the liquid to make the cous cous. Serve with the red pepper sauce in the Ottolenghi recipe or use a good quality harissa.

    Cube the turkey and fry. Cut up some of your favourite veggies and stir fry with the turkey. Meanwhile cook the cous-cous, dress it with some olive oil and coriander, mix in the turkey and veggies and enjoy.
