Driving holiday round the south of France - recommendations

We're planning on spending a week or so driving around the south of France this summer. We'll fly in and out of Nice, and rent a car there. We'd rather get off the beaten track a bit and stay in smaller towns, rather than the big cities. Can anyone recommend any towns or hotels, or anything at all? We've just gotten this…
