Currency to bring to South America

Looking at doing a tour in SA during the summer. Countries will be Peru and Bolivia for certain and maybe a few others like Argentina or Ecuador. What currency should I bring? Local or $ or both. For local do you just use your ATM card?

Bring a small amount of dollars and withdraw the rest with your ATM card.
