Fajitas!

    Alright folks,

    Been making fajitas for a while now, but I want to stop being a lazy fecker and start making the sauce from scratch.

    Any suggestions? Not too mild, not too spicy. For an audience of both people who love spicy and can't eat spicy..

    Chicken, red onion and peppers sliced in a large bowl.

    Add 3 parts smoked paprika and 1 part cumin with a few good glugs of olive oil and mix together. Add more smoked paprika and cumin in 3:1 ratio as needed.

    Season well and leave in the fridge for a few hours.

    Let it come to room temp, get your griddle pan searing hot and lash it on for 5-10 mins until chicken has cooked and veg softened.

    1min before the end squeeze the juice of a lime over the lot.

    Serve on the griddle pan, with tortillas, sour cream, homemade salsa and cheese on the side.
