Yeah, boiling the water and trying again is your best option, most likely it's dissolved C02 that's lowering the pH. Good luck

I agree. Over time deionised water absorbs CO2 and the pH is lowered. If the pH is important in what you are doing it is best to start with fresh deionised water every time
