Concession fee - in a tender

    I am considering appling for a tender for a food establishment.

    The tender information to be provided requires me to state a concession fee (both a fixed flat annual fee & a % of net sales).
    Can anyone give me a steer as to what sort of % and fixed fees I should be looking at (ball park?).

    As I am new to this and I have no prior experience with submitting tenders any thoughts at all will be helpful.
