Calling all bakers! What is the healthiest recipe you have!

I tend to sweeten cakes etc with a dollop of honey where possible. I sometimes use spelt flour too, but have only used to wholemeal version for bread.

I'm also a beginner baker, so all recipes are welcome, no matter how simple they may seem!

Does anyone know if buttermilk is okay to use in baking, if you have high cholesterol?

I would really like to bake a yummy loaf of bread, but can't track down a recipe that has the least amount of sugar possible and is also low cholesterol. Everything is packed with seeds and fruit too! :/

Id like to try an oatbran recipe, but apparently it tastes a bit yucky.

Shouldn't be any prob with buttermilk, the fat makes butter leaving butter milk.. If you're worried, read the side of the carton/ box should be very little saturated fat.....

    Coconut Macaroons

4 large (120 grams) egg whites

3/4cup (100 grams) granulated white sugar *(I use a half of cup of sweetener in substitute,to make it sugar-free, and it's just as good. I also tried it with honey, it wasn't as good)

    pinch of salt

    1 teaspoon pure vanilla extract

1/2 cup (60 grams) cake flour, sifted

3 cups (300 grams) dried sweetened coconut

    preheat oven to 160
Whisk the egg whites and sugar/sweetener in a big bowl over a pan of hot water. When the egg whites become warm to touch take the bowl off the heat and add the coconut. Stir well, then add the flour, salt and vanilla extract.
On a lined baking tray spoon out (use an ice-cream scoop) dollops of the mixture, leaving at least 2cm between each one.
Bake for about 15minutes, until slightly golden (like a meringue would be)

    ^^ I know it's not totally sugar-free, but it's nearly there for a sweet bake :)
