I suspect not as your derraileur is unlikely to be able to take up the slack. With a 53t big ring, you're hardly in need of an 11t sprocket and a 30x27 lowest gear should be easily plenty. Why do you want to change?

    Alpine trip coming up.
Could I modify or replace the derailleur to enable the new cassette?

Some good advice on moving to a larger cassette here. Basically you need to check whether your derailleur has the capacity for the combinations in use. 11/34 is a very wide cassette, sounds closer to something you'd see on an MTB groupset like the Deore than a road bike.

You have a couple of options,
Swop out the rear mech for a MTB rear mech, you can handle 34th with that no probs,
or, change the granny ring on your chainset to something smaller - depending on the BCD you might be able to drop down to a 22. You would definitely get up anything with a 22x28 mix.
