I wish to change my worktop without having the hassle of pulling it out (disconnection gas & water etc). I have come accross a spray paint solution that gives a marble/granite look. However I am after an oak type appearance. Does anyone know off a tradesman that will supply and fit thin layers of heat proof laminate/veneer…

As far as i know the veneer or laminate has to applied under pressure which would be possible to do in situ. Have you thought about tiling the worktop?
