i am also going interrailing later in the year and im figuring to bring €2500 ... its alot sure but iv found in my travels something unexpected always happenes and its better to have more money than not enough.
interrailing ticket = 480 or so
    food + hostel money per day = 50 ... 50 by 30 days = 1500
    cheep flights return = 200
comes to 2180 and then another couple 'just in case money'
2500 .... and plus if u have money left over then put it towards ur next holiday lol

Ye that budget sounds about right! western europe is the most expensive to travel! you always end up spending extras on things like additional train fees (even if you do have the inter rail pass!) and if you would be getting ferries etc they can be a lot! Just make sure to find hostels in as many places as you can....they can be scarce at times (esp in france and Italy) but they are around! Great way to meet people and very easy to give in to the hotel thing sometimes :)
