This is probably a brutally obvious Q but I took off the cap of the cylinder immersion to check setting and found it has 5 setting numbered 1 - 5. Do these settings equate to temperature in celsius, i.e. 1 = 20deg while 5 = 100deg? Is so presumably therefore a setting of 3 or 3.5 should be OK?

I doubt it will go up to 100c. More likely 30 -60 c. I would set it at the lowest setting and see how hot the water gets and then go from there?
Preferably get a new thermostat with temperature settings or check manufacturers website.
