Digital System using PDA's?

I've been asked to check up on something. The organisation that I work for are trying to implement a wireless network in one of their facilities. As part of the network, they want to include a service that uses handheld devices similar to that of a delivery driver or a waitress. An example of its use would be for a manager to be able to generate an order and send it to reception or to look up something on the spot on an internal database or the internet. It should also have a stylus or pen functionality for signatures.

Would it be possible to just set up a few PDA's with specific software on a wireless system and link them to a central computer running a web server or would it have to be a complete stand alone sytem?

Also what kind of PDA's do I look for or is it a different device entirely?

    Thanks
