Looking for a decent skinning knife, mainly for bunnies!

Have only used the cheap and cheerful Opinel knives but the blades dont seem to stay too sharp

    Thanks,

    John

A few years ago I bought a Martinni knife when working in Finland,

I now use it for all game preparation

In fact this is the one. I would recommend it

Buy a buck 110. It's a folder, so similar to what you are used to, and very well built. They are well made and super easy to sharpen.
I have one and I probably use it more than any other knife.

Opinel knives are great ! They are folding knives that lock into place. Razor sharp blade I use them for whittling too. Depending on the size of the blade they start at €3 for a 1.5" I think. I usually buy one or two when in the shop just browsing and have them in the drawer at home. Very handy to have them as they are cheaply replaced.

If its for skinning bunnies ... after all the knives I went through I use this
    http://www.amazon.co.uk/Stanley-010789-FatMax-Retractable-Blade/dp/B003KIR0WK/ref=sr_1_1?ie=UTF8&qid=1329949504&sr=8-1

Seriously, blades always razor sharp cause you can replace them and I use the carpet blade to slit the belly. Dont knock it till you try it :P

+1 great value, easy to sharpen and you won't cry if you lose it:D don't buy the stainless one, they are over rated, stick to the original and you can't go wrong.

+1 on the opinel. Save your self a few quid and just buy a good wet stone and make a strop for it.

€12. I've skinned, cleaned and butchered dozens of bunnies with this. Theres good steel in it and you get very quick with it. Ive even butchered a few deer with it

    I can recommend wholeheartedly http://www.heinnie.com/

Have a look for what you want, Mora or Hultafors are great value as are Opinel and Rough Rider in folders. You'll have your new shiny in a couple of days.

For bunnies I like using a little fixed blade, have a look at ESEE Izula or Boker + Tom Krein pocket bowie or Gentlemans scalpel. I like carbon steels like Izula's 1095, but a mora flexi knife is stainless, flexible and a good choice for filleting/boning and kitchen paring duties. A little long for my tastes in a bunny knife but you may like it?

There are also in fixed blade necker sized knives the KaBar/Becker Eskebar, the Izula II (may ask Heinnies to order in for you), some from Buck like the Caper and Hartsook, CRKT Folt's bowie, TOPS knives have some tiddlers and Meyerco... type "neck Knives" in to the search bar and see if anything takes your fancy. Some steels and heat treatments will be better than others, like Opinel take a great edge, don't last but are easy to touch up. Some "super steels" like M4 or CPM S90V are a bugger to sharpen but only need a touch up every year to stay top.

Any bother feel free to PM me, or ask here for more lecturing on minutiae :D
