    A friend of mine wants to cook pigs head and is wondering if there would be enough in it to feed four?

    Not to promote the blog but its such a specific subject.... but there's a not fair amount of eating in a pigs head but a lot of work.... http://kitchen72.com/index.php/2012/02/fried-pigs-head-terrine/ as can be seen from the photos you'd get about a full Takeaway container of meat from it.     Would still easily feed four, though.
    Very rich meat.

    Usually thrown out by butchers, if you ask one to keep one for you after the next cull i'm sure they would.

    But not many retail butchers (if any) do their own slaughtering these days, so it would be highly unlikely that your average butcher would have a pig's head to 'throw out'. That said, they may be able to order one for you from the abattoir.

    My wife makes a great asian soup from pigs head and you'll easily feed 4-6 off one head. If your butchers sells pork on the bone he'll be able to get a head for you no problem...I use Bresnan's in Douglas, Cork...order it in advance to be sure

    Nearest butcher to me that kills his own is in Athlone if that helps.
