    For example if my online account with paddy power was limited to E10 on football and I won enough on an acc in the shop so big that I had to go to the head office for a cheque could they justify not paying out on the grounds I staked E200?

    No, because betting online and in the shop would be completely different. The bet was accepted and could not be voided on those reasons, they would pay up and probably bar you after it.
