Not a issue. Apply for all the apprenticeships which will be advertised in the next month.

Usually in the newspapers, but this part of boards usually has all the job offers in threads, Theres one about the Aer Lingus one last year, will give you an idea of the process.

Aer Lingus and CityJet do apprenticeships, and there may be others as well as Shannon. You could try contacting companies directly to see if they are willing to take on un-qualified mechanics, which would give you a foot in the door

If going for apprenticeships, I'd advise making sure you have something to show current interest in the craft, to give you that "something" over the kids who have just done electrical in their LC?
