I think it's all about getting the cheap flights. So keep an eye on the usual airports (Munich, Salzberg, Geneva, Zurich, Memmingen, Turin) and go from there.

When I want a cheap weekend, I fly to Paris on Friday evening, get an overnight train to Moutiers or Bourg St Maurice, ski 3 Vallees or les Arcs Saturday and Sunday (stay in youth hostel or cheap hotel), overnight train back to Paris, fly home Monday morning.

The hostel has skis for hire, but I usually go up the mountain and hire them in Arc 1600, so you can save time and bring them right back if necessary. They let you leave shoes and bags there while you ski. You can buy lift pass on the spot, but many hotels will give you a voucher which reduces the price of a day pass.

I'd book hostel or hotels as soon as you confirm your flights. The hotel Malgovert in Seez is cheap and always seems to have spare beds. The free local bus stops right outside the door and takes you to the funi, so it's actually dead handy for skiing les Arcs or St Foy.
