What to do with an off-centre fireplaace

Any suggestions for what to do with a fireplace that is off-centre and it seems that it is quite difficult to actually re-align it.
The house is semi-detached and the chimney breast is very wide with the actual fireplace to the left side but not centred. It is like the fireplace of the attached house is on the other side. We hope to have a recessed stove, that is just flush with the wall but what could we do to make it look ok?

A couple of lengths of 3 x 2 wood and some "fire proof" plaster board and build out the side of the chimney breast, and skim it so that the fireplace/stove "looks" centered in the middle.

Cheapest and easisst way to do it.

Oh and the stove is a Stovax 8kw multi fuel inset stove.
