Service Contract to Other EU State

My 1-3 employee company has a contract to send a consultant to another EU state for a period of months.
I would like to assume that the client (private sector) will pay in good time like my 99% of my clients here.
The client is located in a country which has a slight reputation for having "a grey market economy", I am unaware of the company's reputation (its good I hope), but I am cautious and do not want to end up with a tomorrow tomorrow situation.
Is there some simple reference which I could include in a contract, in order to safeguard payment, or make any later default easier to recover?
    Thanks

You could stick in a jurisdictional clause if you like. Simply that any disputes arising from a contract will be heard in an Irish court.
