Butchered Wild Venison

    I am considering getting some venison for the freezer, have done the same with the odd bullock from the farm back home in the past.
    I know some stalkers sell their dear to butchers to prepare. So any suggestions out there on where to buy a good quality bulk quantity (maybe half carcass butchered) at a good price around wicklow/wexford area?

    Also any suggestions on best breed and cuts?

    I'm told female sika is best!

    Tried Sika and Fallow could not tell the difference in taste.

    All to do with how old the animal is and how long its hung. I leave all my deer for 2 weeks in the cooler to air dry and find the taste is the best.

    Less time if its a year old calf

    Only Game Dealers can sell meat, private people can "give" you meat if they so wish.

    I generally keep the rib roast for myself and the fillets, I give away the rest.

    You could find a stalker to give you a deer in exchange for something else since they arent allowed sell it. The majority or stalkers butcher their own meet.
    most people would be fairy willing to give you some.

    Tack what way do you butcher/cut up the rib roast? are you talking a line of chops together, sounds nice.
