I use this recipe when making enchiladas it would work just as good as a pasta bake

    you need:
    1 large onion chopped
    1 red pepper chopped
    1 tsp cayenne pepper
    1 tsp smoked paprika
    1 tbsp dried oregano
4 chicken breasts cut into strips
    2 tins plum tomatoes
    2 tsp sugar

Put the onion and pepper in a large saucepan and add the spices and oregano and fry for a couple of minutes until they soften then remove from pan.

Add the chicken to the pan and season well and fry until golden then add back in the peppers and onion followed by the tin tomatoes and sugar and mix well.

Let it simmer away for about 20 mins until it has thickened up nicely.

Add to your pasta and sprinke with cheese and breadcrumbs if you wish and bake in oven bout 180 for bout 30 mins!

    Hope this helps :D
