Paying for final fix

I'll start by saying sorry if this is in the wrong forum and if so can it please be moved.

We have renovated an old house and although we agreed with the electrician to pay half at the end of first fix and half at end of second fix. We paid half at the end of first fix as agreed and then he carried on and did more work and asked for more money as he'd had to pay for a couple of things so we paid him more, he has now done about 3/4 of the work and been paid 3/4 of the money. He has now said the job is nearly finished and he's asking for the balance apart from a final €100. The final job won't be completed for around 2mnths, as there is still work to be done before he can complete.

I feel bad saying no as he has been very good and is a nice enough guy but also feel its not really good practise to pay him the bulk of the money yet.

Any opinions on when is fair to pay him.
