Any suggestions as to what I can use to remove carbon & old gasket residue from an alloy (soft) cylinder head ? I need a chemical cleaner to avoid risking scratching the head.

All cylinder heads that your likely to see these days are alloy.

I'd go over it with compressed air first to remove any loose deposits, then, ideally, a decent degreasing fluid or, alternatively, you can power wash it and dry with the compressed air again.

If your just doing a head rebuild/refresh very mild skim will give a fresh perfect sealing surface as well as obviously removing the remaining gasket residue.
