bought a car from uk few weeks ago knowing I'd have 30 days to sort everything but not realising I'm meant to get the ball rolling within the first week of bringing the vehicle in.

would anyone here know if I'm now penalised in any way for missing that deadline?

The penalty comes in the form of the car being seized and impounded for non-payment of VRT and motor tax if you're stopped. Get it done ASAP.
