Can you freeze veg?

    I sometimes buy too much veg and hate binning it so wonder if it's possible to wash, chop and freeze it? In particular I mean tomatoes, carrots, broccoli, celery and mushrooms?

    Also if you can freeze them does it kill alot of the nutrients?

    You'd have to blanch or cook them first, cooked and mashed they can be frozen. Veg like tomatoes and mushrooms can't be frozen in their fresh state because they contain so much water, the freezing action destroys the cell walls and they thaw out mushy and gross. You could make a tomato sauce for pizza/pasta etc.

    I thought that about tomatoes and mushrooms alright. So should u cook carrots, celery etc to before freezing?

    You can blanch them, or carrots freeze well if cooked and mashed, otherwise the texture is a bit mushy if you leave them in slices. Dunno about celery, hate the stuff so wouldn't eat it fresh or frozen!

    i freeze turnip, dice and blanch. i would think all root veg would be the same.

    havent been able to get cabbage to freeze but peppers and chilli peppers just chop and freeze.

    the same with pineapple, and all the soft fruits
