just wondering lads, whats the best way to cook this duck, i was told its full of salt, and its not meant to be a nice duck to eat this is my first time eating this kind of duck and im a guy who loves wild duck, so should i just leave it hang for 3 days like normal and roast it or can i do something to take the taste of the salt out of it

I fry the breast, often i dont bother hanging them just straight on the pan when i get in the door, some say they hang them till it's head is near ready to pop off but 3 days be good. If doing the whole duck i'd roast him but there is little meat on them besides the breast.Bit of duck now be tasty.youtube is brilliant for ideas on cooking them dish's thats where id look ;)

I think your right, checked it out but nothing definite came up about them only saying their Irelands largest species of duck. He's shot now id eat him wouldn't waste him. They be easy mistaken during a nightflight but unsure myself if their protected.
