Mortal Kombat. The laughing stock of the fighting genre produces a competitive fighter, regular online balancing and the best single player mode in a fighter since SF2.

Xenoblade Chronicles. Similar battle system to the awful FFXII battle system. Turns out it fixes everything wrong with that battle system and is superb.

Resistance 3 - Had absolutely no interest and it ended up having the best single player campaign of any shooter this yer.

Deus Ex - All the early previews were fairly negative, saying it was a very average game. Once the reviews started pouring in I picked it up and loved it.

Driver: San Francisco - Far more fun than it had any right to be. Hokey body swapping story turns out to be a fantastic game mechanic.

Skyrim ( same reason as above )

Witcher 2 - it blew me away how mature and interesting game was. Newer played first one and witcher 2 just sucked me in with no coming back. Way more then I expected.

I too am going with Rayman Origins. Wasn't expecting it to be rubbish, but it was still a lot better than I was expecting it to be.
