Most places nearby say Mon - Fro, some Sat but I am just wondering is it ok for loading bays more than 2 hours on a Sunday?

should be written on a sign at the particular loading bay in question.

any street parking (including loading bays) that I've seen in dublin has a sign saying what rules are

Yeah was a max of two hours but what I didn't read was few lines before that permit and disabled only. Ah well.

    Clamping operates every day.

Paying for the parking depends on the signage on the street.
