Lots of head - Taste not great either

    Currently tucking into a Coopers Mexican Cerveza (Corona) style brew.
    Fermented for 2 weeks, left sitting in the bottles for 2 months.
    Put 2 carbon drops in each pint bottle.

    Every bottle I open goes one of two ways:

    1: Way too much head and I can't pour it all in one go, meaning the sediment starts to dislodge and makes it cloudy. And the taste suffers
    2: No head and is almost flat. Taste isnt great either.


    Is this typical of this type of kit, or a result of my brewing method?
    The best I can describe the taste is "sediment-y".

    2 carbon drops for a pint bottle would normally be too much. The recommended dosage is 2 drops per 750ml bottle so that could be causing bottles to have too much head.

    Not sure what might be wrong with the flat bottles.

    Pouring it slowly and leaving it to settle after opening/pouring would let the sediment fall back down to the bottom.

    I'll try that with the next bottle and see if it makes a difference.
    Its like drinking day old beer now. All the "fizz" has gone too soon. It was too fizzy in the first few mouthfuls, and now its flat!!

    Would it make a difference that I took them straight out of the box, and didnt cool them at all?

    It's designed for drinking cold. Give it a week or so cold conditioning to let the sediment drop out and serve it cold so you taste less of it.

    Unpleasant flavours are far more likely to be apparent in pale beers than dark ones.

    I'm having the same issue with a canadian blonde, it hasn't carbonated very well. Is there anything that would cause the secondary fermentation not to happen?

    I've just brewed this one and it turned out great. Was in the bottle for 4 weeks before we started drinking it, only a couple of bottles left now.

    It tastes light and a little sweet, not too fizzy, but definitely not flat and almost no sediment. Very refreshing. I just used 1kg dextrose rather than any spraymalt.

    I'm having the same issue with a canadian blonde, it hasn't carbonated very well. Is there anything that would cause the secondary fermentation not to happen?

    How long has it been in the bottle for? My batch of canadian blonde didn't carbonate properly for about 3 weeks.

    Used 1 carbonation drop per 500ml bottle and was fine, pretty nice in fact!

    Hi, i think i let it get too cold, i've moved it back to a warm place and it's starting to ferment again, so hopefully it should be some nice beer in a couple of weeks, better late than never
