Is there such a thing as an electronic point of sale system (for a pub) that runs on Linux, in particular. one that would run on a touch screen PC?

Some Lotto Machines here run some Linux Variant. You see Tux when
    they start up!

IBM Retail Env runs on SuSe:

Any JavaPOS systems should run just fine also:

it's not linux or pub specific but OpenBravo POS (previously TinaPOS) is a nice ePOS I've implemented (with touchscreens) without issue. I didn't choose the hardware so haven't a list to hand - but if you were interested I might be able to get a copy of the exact hardware that was used .... though this was a number of years ago so the specifics might not be so valid today.

While I wasn't looking for ePOS, I was looking for account packages a few years ago & I think that these systems have a POS module:
    Compiere
    LedgerSMB

Big oldish (2008) thread here http://ubuntuforums.org/showthread.php?t=707388
Other than that try here http://lmgtfy.com/?q=linux+epos :)

Compiere does have a POS module but it's very very rudimentary... the fork Adempiere has a much improved POS plus there is some work done integrating openbravo's POS. To be honest unless the full back office functionality were required too I think these apps are more difficult to install & configure than something like OB POS.

Talk of ERPs reminds me that Apache's OfBiz (Open for Business) project includes a decent POS module. There is a brief overview of the POS module hereThis is the standalone OfBiz app - but it also has a web based web POS - but at first glance it looks less functional to me. But in a multi POS - site - perhaps even a remote POS site - it might be easier to configure than the standalone version as you would not need to configure the Sync processes between servers & POS stations.

I've worked with some linux ones, but they were all command line driven with basic asci menus. Same companies will use windows for their later revision touchscreens.

If you have internet access, there's a number of internet delivered options which work well with touchscreens. Openbravo is reasonably easy to get up and running if you need stock control.

Worth a first look is a simple one called Lemon.
If you've got an ubuntu installation, it's possibly even in the repositories.
There's also an application with it called Squeeze that manages stock.
