Salary Custom and Practise Question

    Hi,
    Hopefully I word this correctly, basically what I'm interested in knowing, is there anything legally around custom and practise for wages? For example, if someone has been receiving a shift premium for a number of years without actually working shift, can the employer decide to take this premium away? Would it make any difference if the premium had been given instead of a pay increase?

    what does the union say? employer cannot change terms and conditions without consultation, however if employee does not agree to changes, employer can deem role redundant....

    Don't want to get into specifics as I don't think that's allowed, but lets assume union's are not an option, and the shift premium is not mentioned in contract.
