DDR3 RAM: dual or triple channel?

Looking at upgrading my CPU, board and RAM to cope with the onslaught of great games that will be coming at it.

Right now I'm rocking a Core 2(6600) @ 2.4GHz on an Asus P5b with 4GB DDR2 RAM.
Looking at the unlocked i5 for a core.

I see triple channel and dual channel RAM.
Is it worth paying more for triple channel and if so, how much?

Any recommendations are welcome (Even a different CPU?), I know enough about this stuff to know I don't know a lot.

(Have a 1KW PSU and a ATI HD4870 1GB that I'm OK with for now)

Nope, for that CPU you want dual channel RAM. Triple channel is only for CPUs that use socket LGA 1366.

That CPU is the best choice for gaming. You want to get a P67 or Z68 motherboard with it to make sure you can use its overclocking abilities. If you're buying from scan, something like this MSI one is cheap and supports SLI/Crossfire should you need it:
