I have used Debut Video capture http://www.nchsoftware.com/capture/index.html. The free version works fine for producing training or Help videos.

I use Windows Media Encoder for doing videos and uploading to youtube..

It seems to have been superceded by Expression Encoder 4..

Camstudio free opensource, allows captions, alternative sound and webcam pip. Various output format incl avi, swf. Works fairly well.
No limitations for commercial use, no limitations for length of recording.
