A steer is another name for a bullock - castrated male over 12 months.

Roughly speaking a calf becomes a weanling at, say, six months and a store (either male/bullock or female/heifer) at 12 months.

A store animal is an animal that is only fed a maintenance diet for a certain amount of time.
