bought my 1st kit and went with a wheat beer and cant wait to get started. it came with 500g spray malt and 1kg dextrose. i bought a tin of malt extract also. with all the talk here not to use dextrose do i have to buy extra spray malt or do i use the tin of malt extract instead.
    thanks

is it 500g regular dme or wheat dme ? I made it befre with the kit and 1kg regular dme it was nice but not very wheaty. If the tin is 1.5 of wheat malt use that. that would do it nicely. if you use the 500g and 1kg dextrose it wil be a light body beer with a kick ( i suppose 4.8% -5% mark)

either way dont worry too much you will get nice beer maybe not 100% true to style but good all the same.get it brewed and see how you go ...:)

Hope its going well for you left_behind!

I'm starting up a wheat beer next. Going with the Coopers Wheat and Liquid Wheat Extract can.

Question for the Wheat beer experts, do I go with the yeast that is supplied or should I try the Safbrew W-06? I've also read good things about the Whitelabs stuff?

Basically the same as i did and its bubbling away upstairs in the wardrope of the spare room.

see post #3 on this thread. It looks like an excellent beer and will be my next as soon as the stout is bottled.

wow looks good! Am I right in saying he added 1kg of Wheat Malt AND 1.5kg of liquid malt? surely that is a little overboard?

    Bit of experimenting so! :D

I don't think it's overboard, the 1kg Dried Wheat Extract is just replacing the 1kg of sugar.

With my 1.7kg Coopers Stout kit i added 1kg DME and 300g Dried Wheat Extract to bring my total to 3kg... it's gonna be about 5.5% I reckon :D

My stout is only just gone into the fermenting bin and already looking forward to throwing on the wheat incl the liquid hefe yeast as per the above link

had my fermenter goin since saturday and checked its at 3.8% had a sneeky taste and its not half bad. fermentation has slowed down alot and wondering should i leave it or can i do something with it. i have have 500g of light dry spaymalt or is it to late for that. gut instinct says to leave it.

I would leave it if I were you, what was the gravity reading btw? I myself usually leave my beers for at least ten days before I either bottle/keg or transfer to a second fermenter if beer is still very cloudy. For a wheat beer you want it cloudy anyway,so leave in primary fermenter until ready to bottle. You just need to check with a hydrometer that fermentation is complete with a constant reading usually in the 1012 to 1016 range.

the first reading was 1.048. reading today was 1.019. ill leave it so till the weekend at least. it was cloudy alright and a definite erdinger/staropramen taste to it so im happy with that. thanks for the reply

A bit off topic so apologies in advance - how long is OK to leave in secondary fermenter? Trying to find the time to clean and sanitize the bottles, but probably won't be until next week. Been in there nearly a week already.

I've heard of five weeks with no ill effects, so at least that.
