Sunken pots in border soil

So I've been googling around to see what people grow in polytunnels and greenhouses. And I keep seeing photos of potted up tomato plants sunken into the border soil rather than the plants just in the soil. Anyone know why they do this? Does it help with watering? Is it about soil control? Restrict the potential spread of pests and deseases?
Thanks for any explanation, there must be a good reason.
