Roasting a Pig

    Hey,

    It's my sister in law's 40th next weekend and im planning a bit of a garden party the centre of which is a pig on a spit! Has anyone tried this is it worth the effort when its cooked? I cant imagine it cooks very well?

    I personally love it! To me spit roast pig is heaven. Thing is it can take up to 24rs to cook and if you are doing it over an open fire it needs constant tending, however i think there are companies that will come and roast the pig for you, maybe not since the crash though.

    P.s. Use a sheet of galvanise as a make shift roof for your spit, this will reflect heat back down and keep piggy dry.

    If you've access to a professional oven with a steam function (and the way we do it when we do Pig on a spit) Hang it in it for a couple of hours at 140. It will keep it more juicy and then transfer it to the spit. It means you won't have to nurse it for the 12 hours that you normally have to

    There's several of these kinda companies around, I've seen them demonstrate on food festivals etc. It tastes great :D

    spit roasted pig is well worth the effort. as stated before it can take all day or a full 24 hours. depending on how big your suckling is. your purveyor will be able to give you an estimated time depending on weight. as for the out come.. food of the gods my friend!!!

    I'd have thought they'd at least throw the spuds in at any rate. Then again, no harm in making your own specialised salads I suppose.

    I can't remember the last time I had this and now I know why. :D

    A friend used these guys a few weeks ago - and I have to say it was the BEST roast pig I've ever tasted. The salads etc were great too. Very professional set-up. http://www.tauhogroast.ie/

    Just be warned that some of these companies use really cheap, mass produced pigs.
    I was at a party a couple of years ago where one was served. The pork tasted of nothing. It was like tofu and very soft too. It was a horrendous waste as only about a third of the pig was eaten. I was there the next morning and I didn't even bother to take any leftovers home as it just wasn't nice.

    The crackling was great though!

    For the right number of people with the right pig,cooked right, it is a wonderful food experience.

    For too few people with the wrong pig it's just a waste of a pigs life and a large deal of money.

    My brother used them a while ago. The pig was utterly fantastic and I still dream of the crackling.

    I have done this, 2 pigs & 1 Lamb, made my own roaster, pig was a factory raised one, cooked over turf & hard wood, secret is controlling the fire, need to keep hotter under front shoulders. The pig was about 50kg dead weight, cost €100 and took about 8 hours, turned every 20mins or so
    The taste is really good, have my own pigs for the last 2 years, 1 will be done next year, should taste so much better when spit roasted.
