I assume you're doing the leaving, and not A-levels, in which case you should be looking at this page: http://www.ucc.ie/en/study/undergrad/how/leavingcert/
The minimum requirements are: HC3 in 2 subjects and passes in four other subjects at H/O level in the Leaving Cert from Irish, English, Mathematics, and three other subjects recognised for entry purposes.
Far as I can tell, that means you need a HC3 or better in 2 subjects, and you need to pass any four others. Irish, English and Maths are compulsory so I think that's why they are named specifically. I'd suggest making sure you pass them as well though. You will also need the minimum points to get the course.
I assume you're back in school by now, so you could always talk to your teachers or guidance counsellor about it.

No you don't, they changed the requirements in the past few years and you don't need a 3rd language for it.

I was aware they changed the maths requirement across the college - my brother applied to that course and to the best of my knowledge needed his third language

i was speaking to one of the admission officers regarding the maths - apologies, i didn't realise it was only across the Arts Faculty, college of Science, Engineering & Food Science relaxed the language requirement but not the maths.
