I know it's not strictly a poem, but there is this:

First they came for the communists,
    and I didn't speak out because I wasn't a communist.

Then they came for the trade unionists,
    and I didn't speak out because I wasn't a trade unionist.

Then they came for the Jews,
    and I didn't speak out because I wasn't a Jew.

    Then they came for me
and there was no one left to speak out for me.

The BBC site has some poems written by 'ordinary' people in the war, such as this one.

Depending on the maturity level of the class involved, there are poems such as this one.

There are also some poems written by children in ghettoes such as Theresienstadt, but they're probably a bit grim for children.

For young kids, refugee blues by wh Auden is good. There's a great anthology called Scanning The Century that gives poetry by event for the c.20.
