Question folks: I've got a 3GS running on iOS 4.1 but want to upgrade it to 4.3.1. Can't do it through iTunes as they're not sigining it anymore. Is there any other way of updating the firmware besides iTunes?

Get the restore file from here and open itunes and follow the instructions below:

Connect your device to the computer using the USB cable and wait for iTunes to detect it.

Once your device has been detected – follow the steps given below.

Hold the Shift key and then click on the "Check for Update/Update" button.

In the next dialog browse to the file that you downloaded from and select the IPSW file.

iTunes will now use the IPSW file and update your device to iOS 4.3. The process should take around 10-20 minutes.

    Should work (I think)

I tried that with another 4.3 restore file I downloaded but getting error 3194 because Apple are only signing the latest firmware.

If the phone is jb you might be able to use sn0wbreeze to "cook" the ipsw

Hmmm.... Your ideas are intriguing to me and I wish to subscribe to your newsletter..........

How would I go about cooking the ipsw?

If your already jailbroken you should be able to put your phone in Pwned DFU mode using redsn0w/pwnagetool/sn0wbreeze/etc and install a custom 4.3.1 or 4.3.3 firmware and tinyumbrella.
although I think you could be stuck with tethered mode only, not 100% sure as I haven't tried it yet
