Things i got friends and family that were moving abroad:

hard drive with a good few movies on it for them to watch
local currency of where they were heading
a pre paid master card with 100 on it
32GD memory card for the camera, she was delighted as she didnt have to transfer her photos onto her lap top as often
a memory stick with a load of music, audio books and meditation/relaxation tracks
for a huge 'Friends' fan who was going to asia: a hard drive with all the friends episodes on it
If you willing to spend a good bit of money one of those amazon kindles, so she can download books onto it

Oh on the pre paid master card:
if you guys hold onto the loading card and jus give her the master card itself, you can top it up for her birthday, christmas etc... U did says she's goin for 3 years...
Just make sure you get the chip and pin one as it will be accepted in more places
