The main rule to qualify for Job Seekers Allowance is to be
available for and genuinely seeking work

After about 3 months he may be able to do a course. Have a read through this link.

Your son will need to have been out of school for 3 months before he can apply for Jobseekers Allowance http://www.welfare.ie/EN/Schemes/JobseekerSupports/JobseekersAllowance/Pages/ja.aspx
If he is living at home he will be means tested on his parents earnings and so yes, it would be helpful for him to have proof of your earnings, along with the following:
    Birth Cert or passport,
supporting identification, for example, driving licence or bank book,
recent evidence of address such as a household bill in your name, correspondence from a financial institution etc.
if you were employed, your P45 or a letter from your employer confirming that you have stopped working and the reason why.

If it turns out that your son is not entitled to a social welfare payment because of means testing etc., he is still entitled to take the Fas course but will not get paid the Fas training allowance.

FÁS Training Allowance is not to be paid to new entrants not entitled to Job Seekers Benefit/Allowance.
