We're heading off to the Selva Gardena in the Dolomites on the 10th December. They do a earlybird deal whereby you get 4 (or 8) nights accommodation and ski pass for the price of 3 (or 6). The resort looks to be high enough so there's a good chance of decent snow

A resort with a glacier will guarantee snow. Like hintertux in Zillertal Valley. Austria

whilst the resort may be open, they may have a phased opening of certain areas. As a result you may find yourself limited to doing the same runs over and over if piste is your thing. depending on the resort, you may be able to get the open dates for sections. this will be subject to change depending on snow fall but i wouldnt bet on them opening earlier than this schedule.

Pretty much everywhere opens the first week of December with the exception of some of the lower places.

The below generally have a good snow record for that time of the year you can get really lucky we skied waist deep snow in December one year in Mayrhofen!!!! But it is hit and miss.

Resorts tend to be much quieter at that time of the year and lift passes a little cheaper

    Mayrhofen/Hintertux

    Tignes

    Obergurgal

    Val Disere / Val Thorens

Soelden - Host a WC race in October so is normally good.

The wider Zillertal region usually opens early in Dec - assuming snow and Hintertux can be brilliant from mid oct on.

Soldeu in Andorra opens around Dec 2nd and with massive snowmaking it would be very unusual not to have most of the runs open by the 12th. One year in three they get 30cm + powder pre mid December.

If you're going to book something for the beginning of December, I'd go for an area that is high in altitude (i'd go for 2000+)
Beginning of the season would require being lucky with the weather.
Most of the resorts do plan to be open around the first weekend of December, but it's weather permitting. And also, many of the runs will still be closed. It's pre-season. Many resorts seem to start opening up all the runs possible around Christmas.
