What kind of approval do you need?
Any kind of tyre will do, assuming it has an E mark, and is the correct size.

i know that in germany, they have specific tyres approved for each vehicle type, and i want to see a site that lists this, so i can make an informed decision when i get around to buying winter tyres (which could be soon).

i mightn't necessarily get what the Germans dictate, but at least i'll be better informed

There isn't any specific tyre tyre approval for each vehicle.
All what is required, is a tyres with adequate speed index and weight index for a car. Speed index needs to be bigger than max vehicle speed, but it doesn't apply to winter tyres. (it's nothing strange, as these regulations apply throughout most EU countries).
During winter time if you are driving on a road covered in snow or ice, you need to have winter tyres or all season tyres. (anything with M+S marking).

    That's all.

OP, I think you might be getting confused with the recommended tyre size. The example below is of a Citroen. In s 20 and 21 it shows the size of tyre and wheel allowed. You can put bigger ones on but it must be reported to the local car registration centre where they will change it. It simply lists the size, the brand is your choice. As said above so long as its "E" rated it is OK.

What some German magazines such as Auto Motor und Sport do is they test the same car with various tyre brands to find out which is best, they do this with both summer and winter tyres.

Perhaps you are thinking of this. If you have a very popular brand of car then it may have been tested in one of these group tests. You can check online for this, try google.de for better results.

As long as they have the E mark on them its fine.

Winter Tyre requirements only really become a problem if you have an accident anyway.

You are forgetting about speed and weight index, which is the same important as size.

Speed index has to be bigger than car max speed.
