Our pheasant pen is over grown with nettles and we have some birds in it. Is it ok to use spray to kill the nettles?

Pheasants like nettles, we leave our pen full of weeds.

Yeah leave them, our pen is full of them and other weeds great cover and stop boredom kicking in which leads to feather pecking.

Yes - farmers are encouraged under the various Corncrake schemes to provide early cover like Nettle beds, so I assume pheasants would appreciate them too
