Eight eggs

    I have eight eggs that have to be used by the end of the day. What can I do with them.

    OH keeps buying the Tesco breakfast boxes, but he doesn't eat eggs so they just pile up. I've already eaten a half dozen of them this week, now I need to use up the rest and all I can really thin to do is make a kilo of pasta, but I'd prefer cake/biscuit recipes.

    It's not a cake or biscuit recipe, but back when we had a load of hens (and therefore a lot of eggs) I used to make crustless quiches. 4 eggs to 250ml cream, throw in a handful of grated cheese plus whatever else you fancy - chopped ham, steamed broccoli florets and some smoked salmon, chopped peppers, whatever. Mix it all together, pour into an ovenproof dish, and bake at 180 degrees for around 40 mins, or until the middle stops wobbling. Good served in slices with salad for lunch, or breakfast on the run.

    This is fantastic, easy and v.tasty. Great for picnics or if you have a bunch of people over.

    That sounds just the ticket! I love cauliflower (why do so many people hate it?) and I have some in the freezer. Have everything else too. Although, now my problem is that I don't have enough eggs!

    I'd say, beat the 8 eggs then tip in the cauliflower in and see if there is enough egg mixture to cover it. And if not, lash in a bit of milk to bring it up. I've made 1/2 of the recipe in loaf tins, also very sucessful. Feta/goats cheese is lovely in it too. Tastes even better the next day.
