Cooking Courses?

I am looking for an suitable cookery course that I could get as a present for my husband.

He is a very good cook naturally, but would like to know more in particular about flavours and techniques. He doesn't necessarily want to do a theme/national cuisine style course, but if there was nothing else he would prefer Greek/Moroccan type. Nothing very fancy, (he doesn't want to enter Master Chef) but good tasty home cooking with interesting recipes.

Ideally would be something that was one evening a week, in the Dublin (south) area.

    Any ideas?
    Thanks!
