Bump up the board to a fullsize P67, and bump up the CPU to a i5-2500K, if it's for gaming.

Considering that would cost almost €100 more, its not exactly a 'small amount' Its worth it, but I would 100% get a better graphics card before considering a 2500k. This one for example is a LOT better:

Also this is a better hard drive:

With a budget that tight, I think you should get an AMD system, since it's gaming build; it would allow you to allocate more towards the GPU.

Just realised I'll have a bit more money than I thought, so was thinking of going for the Club ATI Radeon HD 6950 2048MB and the Intel i5 2500, sound good?

Yeah you're onto a winner there alright. Very nice combo for a gaming machine.

2500K is the one that you're looking for - and a P67 or Z68 board.

Any opinions on PSUs? I've seen some cheap, higher wattage ones floating about (eg. this one: http://www.mindfactory.de/product_info.php/info/p631108_750W-Inter-Tech-Combat-Power-CP750.html)

but just thinking about the old adage "If you buy cheap you get cheap":P

Would it be better to go for a dearer, better known brand with lower wattage?

If you buy a cheap psu you definitely run the risk of it blowing and frying the rest of your components. The super flower amazon you have in your build is a good choice, and gets recommended a lot around here and should be enough power for what you are buying.

It applies even moreso with PSUs, but also includes not spending more money on a random PSU as it can still be a load of crap.
