my father was attending a Hospital for a while with different ailments but in the last year he got a bad infection on and it got progressively worse even though in my opinion the person in charge did not know what they were dealing with,

at one time they were admiting him but later in the day, was sent home because they had no beds, my father was then brought to a different hospital the next afternoon because the nurse who came to the house who were treating was not happy with his condition

since he went to the other hospital he deterioated and passed away

i would like to know, who would be the best to speak with

I don't mean to sound insensitive but the answer to your question is obviously a solicitor. THat is presuming you feel that there was some negligence and you wish to pursue a claim.

Medical Negligence cases are notoriously difficult to prove and the only person who can tell you if you have grounds for a complaint is a solicitor who has heard and weighed up all the facts.

Perhaps before running to a solicitor and running up legal costs you could do worse than address your concerns/questions to the hospitals/doctors involved ?
May well answer your questions and set your mind at rest.

I'm sorry to hear of your loss.

If you are as determined as you say, you should speak to a solicitor about it immediately. There are very strict time limits as regards certain causes of action.

I sympathise with your plight and it's a terrible situation to be in. If it's justice you are looking for, then the appropriate forum is the Irish Medical Council to complain about the doctor. You will not receive any compensation for this but I don't believe that is what you're after.
